Yay!

We got some good news this week! Do you remember the basement flooding incident? We got the bill for $7500 and we were starting to wonder how we were going to pay for it. The manufactor of the part that broke was examining it and finally came up with the conclusion that it was put on too tight. Our landscaper friend let up bill through his liability insurance and they are going to cover it 100%. They are even going to reimburse us for the bed that got ruined. Thank goodness.

Eclair Cake (Mandy)
3 pkgs. french vanilla instant pudding
2 cups cold milk
1 tsp vanilla
mix then fold in:
1 (8 oz) cool whip
Chill in fridge. butter a 9x13 pan.
1 box chocolate grahams
Layer chocolate grahams(not crushed) then 1/2 pudding mixture, another layer of grahams and pudding and the end with a layer of grahams.

Icing:
1 1/2 cup powder sugar
3 Tbsp cocoa
2 Tbsp white Karo syrup
2 Tbsp soft butter
2 tsp vanilla
Beat frosting, put on the top of cake and return to refrigerator to for additional 2 hours.

Raspberry Pretzel Salad

3/4 bag or less of pretzels, crushed
½ cup melted butter
2 tablespoons sugar

Stir pretzels and sugar in a 9x13 pan and bake at 400° for 8-10 minutes.

8 ounces cream cheese (softened)
8 ounces Cool Whip
1 cup sugar

Whip cream cheese, Cool Whip, and sugar together. Drop in clumps on cooled pretzel crust, for easier spreading. Spread over crust covering all holes (seal off edges so that jell-o won’t leak and make crust soggy).

2 cups boiling water
2 (3 ounce) packets of Jell-O (Raspberry, Strawberry…)
1 or 2 packages of frozen fruit (Raspberries, Strawberries, or Mixed Berries)

Boil water and then add the 2 packets of Jell-O. Mix Jell-O and water well, then add the frozen fruit straight from the freezer into the Jell-O. The frozen fruit will make the Jell-O set up faster. With slotted spoon, spread fruit evenly, and then pour in remaining Jell-O. Chill for about 1-2 hours.
